Resumen

El turismo gastronómico se ha convertido en una forma de hacer turismo que permite a los turistas conocer la identidad cultural de un territorio a través de la comida tradicional. En este marco, el conjunto de saberes ancestrales juega un papel muy importante, ya que estos saberes comprenden el cúmulo de conocimientos, técnicas y prácticas que se han ido transmitiendo de generación en generación para elaborar los alimentos, utilizar los ingredientes de los medios locales y mantener vivas las tradiciones de la cocina. La relación entre el turismo gastronómico y los saberes ancestrales permite poner en valor el patrimonio cultural y promover con ello la economía de las comunidades locales. Mediante las experiencias culinarias de primera mano, los turistas pueden participar de actividades como elaborar platos tradicionales, recolectar productos de la agricultura local o aprender técnicas culinarias de cada lugar. Como consecuencia de estas experiencias, se favorece tanto la práctica de las costumbres gastronómicas propias del patrimonio cultural, así como también poner en valor los productos autóctonos; el turismo gastronómico asociado a saberes tradicionales dispone de un vínculo con el desarrollo sostenible de los espacios rurales, ya que promueve el consumo de productos autóctonos, la economía del lugar y la conservación del Patrimonio cultural inmaterial; la cocina tradicional constituye el hilo conductor para el desarrollo del turismo cultural y para la recuperación de la memoria histórica de las comunidades.

Abstract

Gastronomic tourism has become a form of tourism that allows visitors to experience the cultural identity of a region through its traditional cuisine. Within this framework, ancestral knowledge plays a crucial role, encompassing the wealth of knowledge, techniques, and practices passed down through generations for preparing food, utilizing locally sourced ingredients, and preserving culinary traditions. The relationship between gastronomic tourism and ancestral knowledge allows for the appreciation of cultural heritage and, consequently, the economic development of local communities. Through firsthand culinary experiences, tourists can participate in activities such as preparing traditional dishes, harvesting local agricultural products, and learning local culinary techniques. As a result of these experiences, the practice of culinary traditions rooted in cultural heritage is encouraged, as is the promotion of local products. Gastronomic tourism linked to traditional knowledge is connected to the sustainable development of rural areas, as it promotes the consumption of local products, the local economy, and the preservation of intangible cultural heritage. Traditional cuisine serves as the common thread for the development of cultural tourism and for the recovery of the historical memory of communities.
